Quick Banana Pie
|Biscuits||1 Dozen (plain)|
|Icing sugar||2 Tablespoon|
|Brown sugar||1 Tablespoon|
|Thick cream||1 Cup (16 tbs)|
|Dessicated coconut||1⁄2 Cup (8 tbs)|
|Orange/Lemon rind||1 Teaspoon|
Crush the biscuits and mix with icing sugar and enough melted butter to make a firm mixture.
Pack into a well buttered glass pie dish and place in refrigerator for 15 minutes.
Beat the brown sugar into the cream and mix gently with peeled and sliced bananas and the orange rind.
If the cream is too thick, add 1 tblspn, of orange juice.
Spoon banana mixture onto the biscuit mixture and sprinkle with desiccated coconut.
