Buttermilk Meringue Pie
|Sugar||1 Cup (16 tbs)|
|All purpose flour||1⁄4 Cup (4 tbs)|
|Buttermilk||2 Cup (32 tbs)|
|Lemon juice||1 Tablespoon|
|9 inch pie shell||1 , baked|
In top part of double boiler, mix sugar with flour and salt.
Beat together whole egg, egg yolks, and buttermilk.
Gradually stir into first mixture.
Cook over boiling water until smooth and thickened.
Cool slightly and add butter and lemon juice.
Pour into cooled pie shell.
Top with Meringue and bake in preheated hot oven (400°F.) for 5 minutes, or until slightly browned.
Cool before serving.
Makes 6 to 8 servings.
