Simple Onion Pie

Ingredients
  Onions 2 Medium
  Butter/Margarine 3 Tablespoon, divided
  Milk 1⁄2 Cup (8 tbs)
  Egg 1 Large
  Parmesan cheese 1 Tablespoon
  Crushed saltine crackers 1⁄2 Cup (8 tbs)
Directions

Preheat oven to 325 degrees.
Grease or spray with pan release a 7-inch pie plate.
Cut onions in half lengthwise; place cut side down on cutting board and slice thinly.
In a small skillet melt 1 tablespoon butter; saute onions until transparent.
Spread in prepared pie plate; set skillet aside.
In pint pitcher measure milk; add egg and cheese; whisk or beat well with a fork.Pouroveronions.Bakel5 minutes.
Meanwhile, melt remaining 2 tablespoons butter in skillet; add cracker crumbs; toss well; toast lightly over low heat.
Sprinkle over pie,Bake, just until set, 5-10 minutes longer.
Good with any leftover sliced meat.
Use 1/2 cup grated Cheddar cheese instead of Parmesan cheese, if you prefer.
