Pinwheel Turkey Pie

|Carrots||4 , cut up|
|Potatoes||2 , cut up|
|Chopped parsley||1⁄2 Cup (8 tbs)|
|Leftover diced turkey||3 Cup (48 tbs)|
|Turkey gravy/Chicken bouillon||2 Cup (32 tbs), thickened|
Partially cook carrots and potatoes in boiling salted water.
Drain; add remaining ingredients except Parsley Pinwheels and simmer until vegetables are tender, adding more water if necessary.
Serve topped with Parsley Pinwheels.
