Mincemeat Pecan Pie
|Condensed mincemeat||9 Ounce, broken up (1 Package)|
|Corn syrup||1⁄2 Cup (8 tbs) (Karo Light / Dark)|
|Margarine||1⁄4 Cup (4 tbs)|
|Eggs||3 , slightly beaten|
|Coarsely chopped pecans||1⁄2 Cup (8 tbs)|
|Grated orange rind||1 Tablespoon|
|Unbaked 9 inch pastry shell||1|
|Sherry||1⁄4 Cup (4 tbs)|
In mediumsaucepan stir together first3 ingredients.
Stirring constantly, bring to boil over mediumheat.
Remove from heat.
Gradually stir into eggs.
Add pecans and rind.
Pour into pastry shell.
Bake in 350-degree oven for 40-50 minutes, or until knife inserted near center comes out clean.
Pour sherry overfilling.
