Margaret's Strawberry Pie
|Water||3⁄4 Cup (12 tbs)|
|Lemon juice||2 Teaspoon|
|Heavy cream||1 Cup (16 tbs)|
|Cream cheese||8 Ounce (Use Less If Desired, 1 Piece)|
|Deep dish pie shell||1|
Line bottom of baked pie shell with softened cream cheese, and 1 cup whole strawberries (standing up on bottom).
Crush 1 cup or so of berries, add water and heat; combine sugar and cornstarch.
Add to fruit and cook until thickened.
Add lemon juice, cool a little then pour over berries in pie shell.
Chill and then decorate with whipped cream just before serving.
