Bacon And Potato Pie

Ingredients
  Thick bacon slices 8 , rind removed, finely chopped
  Potatoes 2 Medium, peeled, finely shredded and squeezed dry
  Finely chopped onion 2 Tablespoon
  Flour 1⁄4 Cup (4 tbs)
  Eggs 2 , beaten
  Milk 1⁄2 Cup (8 tbs)
  Rendered bacon fat 1 Tablespoon
  Salt To Taste
  Pepper To Taste
Directions

Mix the bacon, potatoes and onion together, and add the flour.
To the beaten eggs, add a little salt and pepper, and the milk, and blend this liquid into the bacon, potato and onion mixture.
Melt the bacon fat in a shallow piepan until hot, pour in the pie mixture and bake in a preheated 400° F. [200° C] oven for about 45 minutes or until the pie is browned on top and firm to the touch.
Slice the pie and serve it hot, topped with dollops of Cornish cream and accompanied by fresh green peas.
