12 Inch Pumpkin Pie
|Sugar||1⁄2 Cup (8 tbs)|
|Firmly packed brown sugar||1⁄2 Cup (8 tbs)|
|Canned pumpkin||16 Ounce (1 Can)|
|Evaporated milk||14 Ounce (1 Can)|
|12 inch pie shell||1 , baked|
In large mixing bowl, combine all ingredients (except pastry shell) in order given.
Beat until well blended.
Pour mixture into pie shell.
Microwave, uncovered, 4 minutes until edges begin to set.
With a spoon, carefully pull the cooked portions to the center of the dish.
Microwave, uncovered, an additional 6 to 8 minutes.
Let stand 5 minutes.
Turn pie plate one-half turn after 3 minutes and again pull cooked portions to center.
Pie is done when knife inserted in center comes out clean.
