Creamy Lemon Cheese Pie
|Microwaved one crust pastry||1|
|Cream cheese||8 Ounce|
|Sugar||1⁄2 Cup (8 tbs)|
|Grated lemon peel||2 Teaspoon|
|Lemon juice||2 Tablespoon|
Microwave cream cheese in small mixing bowl at 50% (Medium) 1 minute to soften.
Beat until fluffy.
Add eggs; beat well.
Blend in remaining ingredients.
Microwave at 50% (Medium) 3 to 4 1/2 minutes, or until heated, stirring well every 2 minutes.
Turn into shell.
Microwave at 50% (Medium) 6 to 10 minutes, or until almost set in center, rotating 1/4 turn every 3 minutes.
Chill before serving.
