Potato Topped Pork Pie
|Cut up pork roast||3 Cup (48 tbs) (leftover)|
|Tart apples||2 , peeled, cored and thinly sliced|
|Brown sugar||4 Tablespoon|
|Pork gravy||1 Cup (16 tbs) (leftover)|
|Mashed sweet potatoes||3 Cup (48 tbs) (hot)|
|Light cream||1⁄4 Cup (4 tbs)|
|Finely chopped walnut meats||1⁄2 Cup (8 tbs)|
In a greased 8-inch square baking pan, alternate layers of the meat, sliced apples, and a mixture of the brown sugar and cinnamon.
Pour over the gravy.
Beat together until blended the mashed potatoes, butter, cream, salt, and pepper; pile over the meat mixture, spreading evenly.
Sprinkle with nut meats.
Bake, uncovered, in a moderate oven (350°) for 45 minutes.
