Apple Pie

Ingredients
  Double crust pastry 1
  Granny smith apples 7 Large, peeled, cored, and sliced (Such As Granny Smith, Golden Delicious, Or Any Tart Apple)
  Sugar 3⁄4 Cup (12 tbs)
  All purpose flour 2 Tablespoon
  Quick-cooking tapioca/All purpose flour 1 Tablespoon
  Cinnamon 2 Teaspoon
  Lemon juice 2 Teaspoon
  Grated lemon peel 1 1⁄2 Teaspoon
  Unsalted butter 1 Tablespoon, cut up
  Milk 1 Tablespoon
  Sugar 1 Tablespoon
Directions

Prepare the pie crust as directed for a 9-inch deep-dish pie.
Preheat oven to 425°F.
In a large bowl, toss together the apple slices, sugar, flour, tapioca, cinnamon, and lemon juice and peel.
Turn the mixture into the prepared pie shell.
Dot the filling with butter pieces.
Place a second crust over the pie filling, fluting the edges as desired.
Brush the crust with milk and sprinkle with sugar.
Bake for 15 minutes, then reduce the oven temperature to 350°F.
Bake until the apples are tender and the crust is golden brown, about 35 to 40 minutes more.
