Egg And Potato Pie
|Onion salt||1⁄2 Teaspoon|
|Potatoes||6 , cooked, mashed, and seasoned|
|Hard cooked eggs||6 , cut in to chunks|
|All purpose flour||1 Tablespoon|
|Curry powder||1⁄2 Teaspoon|
|Milk||3⁄4 Cup (12 tbs)|
|Parsley sprigs||2 , chopped|
Add onion salt to potato and line a shallow 1 1/2-quart baking dish with the mixture.
Fill center with the eggs.
Melt butter, and blend in flour and seasonings.
Gradually add milk and cook, stirring constantly, until thickened.
Add parsley and pour over eggs.
Bake in preheated moderate oven (375°F.) for about 30 minutes.
