Red And Green Tomato Pie
|Unbaked 9 inch pastry shell||1 , unbaked (Or Single Pastry Crust)|
|Undiluted evaporated milk||2 Fluid Ounce|
|Sliced tomatoes||4 Cup (64 tbs) (Use Both Red And Green)|
|Salt||1 1⁄2 Teaspoon|
|Mayonnaise||1⁄3 Cup (5.33 tbs)|
|Grated parmesan cheese||1⁄3 Cup (5.33 tbs)|
|Garlic||1 Clove (5 gm), minced|
Line pie pan with pastry rolled 1/8 inch thick, crimp edges, and brush shell with evaporated milk.
Bake in preheated very hot oven (450°F.) for 5 minutes.
Fill shell with tomatoes and sprinkle with the salt and pepper.
Mix remaining ingredients and spread on tomatoes.
Bake in preheated moderate oven (350°F.) for 40 minutes, or until tomatoes are done.
