Red And Green Tomato Pie

Ingredients
  Unbaked 9 inch pastry shell 1 , unbaked (Or Single Pastry Crust)
  Undiluted evaporated milk 2 Fluid Ounce
  Sliced tomatoes 4 Cup (64 tbs) (Use Both Red And Green)
  Salt 1 1⁄2 Teaspoon
  Pepper 1⁄8 Teaspoon
  Mayonnaise 1⁄3 Cup (5.33 tbs)
  Grated parmesan cheese 1⁄3 Cup (5.33 tbs)
  Garlic 1 Clove (5 gm), minced
Directions

Line pie pan with pastry rolled 1/8 inch thick, crimp edges, and brush shell with evaporated milk.
Bake in preheated very hot oven (450°F.) for 5 minutes.
Fill shell with tomatoes and sprinkle with the salt and pepper.
Mix remaining ingredients and spread on tomatoes.
Bake in preheated moderate oven (350°F.) for 40 minutes, or until tomatoes are done.
