Grecian Spinach Pie
|Spinach||3 Pound, chopped|
|Chopped parsley||1⁄2 Cup (8 tbs)|
|Chopped dill||1⁄2 Cup (8 tbs)|
|Scallions||1 Bunch (100 gm), chopped|
|Onions||1 Pound, chopped|
|Olive oil||1⁄2 Cup (8 tbs)|
|Feta cheese||1⁄2 Pound|
Mix spinach, parsley, dill and scallions in large bowl; sprinkle with salt.
Drain; squeeze out moisture.
Brown onions in oil; stir into spinach mixture.
Stir in cheese; season to taste with salt and pepper.
Stack 4 to 5 phylo in shallow oiled baking pan; brush each sheet with oil.
Add spinach mixture.
Cover with remaining pastry sheets; brush with oil.
Cut steam vent.
Bake at 325 degrees for 40 minutes.
