Banana Pie

Ingredients
  9 inch double crust pie pastry 1 (Unbaked)
  Firmly packed light brown sugar 3⁄4 Cup (12 tbs)
  All purpose flour 2 Tablespoon
  Salt 1⁄8 Teaspoon
  Ripe bananas 7 Medium
  Fresh lemon juice 3 Tablespoon
  Butter/Margarine 3 Tablespoon
Directions

Roll slightly more than half of pastry 1/8 inch thick; line pie pan.
Mix next 3 ingredients and sprinkle about one fourth into lined pan.
Peel bananas and cut into halves crosswise.
Split halves lengthwise and arrange one third in pie pan.
Sprinkle with one third of sugar mixture and the lemon juice.
Dot with 1 tablespoon butter.
Repeat until all ingredients are used.
Roll out remaining pastry and fit over top of pie.
Bake in preheated hot oven (400°F.) for 30 minutes, or until crust is browned and bananas done.
Serve warm or cold.
