Deep Dish Fresh Apple Pie

Ingredients
  Quick-cooking tapioca 3 Tablespoon
  Granulated sugar 3⁄4 Cup (12 tbs)
  Firmly packed brown sugar 1⁄3 Cup (5.33 tbs)
  Salt 1⁄4 Teaspoon
  Ground cinnamon 1 Teaspoon
  Ground nutmeg 1⁄2 Teaspoon
  Sliced peeled tart apples 5 Cup (80 tbs)
  Pastry for 1 crust 8 inch pie 1 , unbaked
  Whipped cream 1 Cup (16 tbs)
Directions

Mix tapioca with sugars, salt, cinnamon, and 1/2 teaspoon nutmeg.
Fold in apple slices.
Pour mixture into a deep 8-inch square baking dish.
Roll pastry into an 8-inch square.
Cut several slits near center of pastry and arrange pastry on apples.
Bake in preheated hot oven (425 °F.) for about 35 minutes.
Serve with whipped cream spiced with nutmeg.
