Key Lime Pie
|Unflavored gelatin powder||1⁄4 Ounce|
|Cold water||1⁄4 Cup (4 tbs)|
|Granulated sugar||1⁄2 Cup (8 tbs)|
|Lime juice||1⁄3 Cup (5.33 tbs)|
|Grated lime peel||2 Teaspoon|
|Green food coloring||1 Teaspoon|
|Whipping cream||1 Cup (16 tbs)|
|Baked 9 inch pie shell||1|
|Whipped cream||1⁄4 Cup (4 tbs) (For Garnish)|
Sprinkle gelatin over cold water in saucepan.
Let stand 5 minutes.
Add egg yolks.
Add first amount of sugar, lime juice, salt, lime peel.
Beat to mix.
Tint a pale green.
Heat and stir until boiling then remove from heat.
Chill until mixture will leave a mound when spooned.
Beat egg whites until soft peaks form.
Add second amount of sugar gradually while continuing to beat until stiff peaks form.
Fold gelatin mixture into egg whites.
Beat cream until stiff.
Fold into filling.
Turn into pie shell.
Garnish with additional whipped cream.
