Fried Oyster Pie
|Pastry||1 (For 1 Crust Pie)|
|Oysters||6 Large (Or 12 Small Size, Fresh / Quick Frozen)|
|Fat/Shortening||2 Cup (32 tbs) (For deep frying)|
1. Set a frying kettle on a warm part of the range; fill it half full of fat or shortening and let it slowly heat to 380° F., or hot enough to brown a 1-inch cube of bread in 40 to 55 seconds.
2. Roll out the pastry on a Ughtly floured board and cut it into 6 squares. Place 1 large or 2 small oysters on 1 side of each square. Sprinkle with salt and dot with butter or margarine, then fold over the dough to make triangles. Pinch the edges together to seal tightly.
3. Fry 3 to 5 minutes, or until the pies are lightly browned. Drain on paper towels and serve immediately.
