Season the pork well with salt and pepper.
Layer the pork with the apples, onions and potatoes in a deep, greased pie dish, sprinkling sage and seasoning over.
Dot with lard, pour in the stock, and cover with foil or wax paper.
Bake for one and a half hours at 325° F. [170° C.].
Cool and cover with pastry or mashed potatoes.
Bake about 30 minutes at 425° F. [220° C.].
