Bacon Crust Pie

Ingredients
For crust
  Cooked lean bacon 1 Pound, minced
  Canned tomato puree 8 Ounce (1 Small Can)
  Breadcrumbs 4 Ounce
  Onion 1 Small, chopped
  Pepper To Taste
  Green pepper 2 Ounce, chopped
For filling
  Cooked rice 6 Ounce (Patna Rice)
  Swiss gruyere cheese 6 Ounce, grated
  Seasoning To Taste
  Parsley sprigs 1 (For Garnish)
Directions

Mix crust ingredients together, knead well and press into the bottom of a 9-inch pie tin, making a fluted edge all round.
To make the filling combine rice, tomato puree, 3 oz.
of the cheese; seasoning and spoon into the bacon shell.
Cover with greaseproof paper.
Bake in centre of a moderate oven (375°F - Gas Mark 4) for 15 minutes.
Remove paper, sprinkle over remaining cheese and place under the grill to brown lightly.
Garnish with a sprig of parsley.
