Broccoli Cheese Pie
|Canned condensed cheddar cheese soup||1 Can (10 oz) (1 Can, Sauce)|
|Condensed cheddar cheese soup||11 Ounce (1 Can, Sauce)|
|Cooked rice||1 1⁄2 Cup (24 tbs)|
|Frozen chopped broccoli||10 Ounce, cooked, drained (1 Package)|
|Ricotta cheese/Creamed cottage cheese||1 Cup (16 tbs)|
|Sweet red pepper||1 , cut into matchstick thin strips|
1. In medium bowl, stir 1/3 cup of the soup until smooth; stir in rice and 1 of the eggs. Press mixture onto bottom and side of 9-inch microwave-safe pie plate, forming a shell. Microwave, uncovered, on high 2 minutes or until nearly set. Let stand, uncovered, while preparing filling.
2. In large bowl, stir remaining soup until smooth; stir in remaining 3 eggs, broccoli, ricotta, red pepper and pepper. Spoon into rice shell.
3. Microwave, uncovered, at 50% power 22 minutes or until center is set, rotating dish 3 times during cooking. Let stand, uncovered, 10 minutes.
