Old Fashioned Coconut Custard Pie
|Milk||2 Cup (32 tbs)|
|Sugar||3⁄4 Cup (12 tbs)|
|Commercial biscuit mix||1⁄2 Cup (8 tbs)|
|Butter/Margarine||1⁄4 Cup (4 tbs)|
|Vanilla extract||1 1⁄2 Teaspoon|
|Flaked coconut||1 Cup (16 tbs)|
Combine milk, sugar, biscuit mix, eggs, butter, and vanilla in jar of an electric blender.
Blend at Low 3 minutes.
Add coconut and blend at Low 30 seconds.
Pour mixture into greased 9-inch glass pie plate.
Let mixture stand 5 minutes.
Microwave at HIGH 2 minutes.
Rotate dish 1/2 turn.
Microwave at MEDIUM 8 to 10 minutes.
Allow pie to stand, uncovered, 5 minutes before serving.
Pie filling makes a crust.
