Apricot Crumb Pie
|Quick cooking tapioca||2 Tablespoon|
|Granulated sugar||3⁄4 Cup (12 tbs)|
|Fresh apricots||2 Pound, halved and pitted|
|Lemon||1⁄2 , juiced|
|9 inch single crust pie pastry||1 (unbaked)|
|Firmly packed light brown sugar||1⁄3 Cup (5.33 tbs)|
|All purpose flour||1⁄4 Cup (4 tbs)|
|Ground cinnamon||1⁄2 Teaspoon|
Mix tapioca, granulated sugar, and salt.
Combine with apricots and lemon juice.
Pack into 9-inch pie pan lined with pastry.
Mix brown sugar, flour, and cinnamon; cut in butter to form crumbs.
Sprinkle over apricots.
Bake in preheated hot oven (425Â°F.) for 15 minutes; reduce heat to moderate (375Â°F.) and bake for 30 to 35 minutes longer, or until apricots are tender.
