Frozen Blueberry Pie
|9 inch deep dish pastry shell||1|
|Flour/2 tablespoon quick cooking tapioca||4 Tablespoon|
|Firmly packed brown sugar||3⁄4 Cup (12 tbs)|
|Firm butter||3 Tablespoon|
|Frozen unsweetened blueberries||3 Cup (48 tbs)|
|Lemon juice/3 teaspoon vinegar||4 Teaspoon|
Combine the flour and brown sugar.
Rub in butter with fingertips.
Toss in the blueberries and stir with a fork.
Spread evenly in prepared pie shell.
Sprinkle with lemon juice.
Add a dash or two of mace if it's a favorite spice.
Cover with top crust.
Bake at 450F for 20 to 25 minutes, then reduce heat to 350F and bake until juice is thickened, about 25 to 30 minutes.
