|Frozen chopped spinach||20 Ounce (2 packages, 10 ounce each)|

|Minced onion||3⁄4 Cup (12 tbs)|
|Eggs||3 , beaten|
|Shredded mozzarella cheese||1⁄2 Cup (8 tbs)|
|Shredded jack cheese||1⁄2 Cup (8 tbs)|
|Crumbled blue cheese||1⁄2 Cup (8 tbs)|
|Grated parmesan cheese||8 Ounce|
|Bread crumbs||1⁄4 Cup (4 tbs)|
|Filo pastry sheets||1⁄2 Pound|
Thaw spinach then squeeze to remove excess water.
Saute' onion in butter; add spinach and cook 5 minutes, or until most of the moisture evaporates.
Remove skillet from heat and stir in eggs, salt, pepper, nutmeg, cheeses and bread crumbs.
Cut pastry leaves lengthwise into 5" strips and keep covered with a damp tea towel.
Heat oven to 425 degrees.
Take a strip, brush lightly with melted butter.
Place 1 heaping tablespoon of spinach mixture in right hand corner and fold up like a flag into triangles.
Place on cooky sheets, brush with butter and bake 15 to 20 minutes, or until golden.
