Tofu Mincemeat Pie
|Tofu cake||12 Ounce (soft, 1 cake)|
|Apple juice/Orange juice / water||3 Teaspoon (cold)|
|Mincemeat||2 Cup (32 tbs)|
|Grated orange rind||1 Teaspoon|
|Chopped nuts||1⁄2 Cup (8 tbs)|
|Honey||3 Teaspoon (optional)|
Prepare tofu according to directions above.
When the tofu reaches the consistency of whipped cream, scrape into a large bowl.
Add gelatin to juice.
Let sit 5 minutes, then warm gently to dissolve.
Add 1-2 tablespoons creamy tofu to gelatin and blend thoroughly.
Gradually return gelatin mixture to the prepared tofu.
Transfer tofu to a bowl.
Add mincemeat, rind and nuts.
Mix thoroughly until blended.
Taste, and if a sweeter filling is desired, stir in honey.
Pour into prepared 9-inch pie crust of your choice).
Refrigerate for several hours.
