Tofu Carob Pie
|Carob chips||1 Cup (16 tbs)|
|Honey||1⁄2 Cup (8 tbs)|
|Soft tofu||1⁄2 Pound|
|Peppermint extract||1⁄4 Teaspoon (to taste)|
Over low heat, melt carob chips with honey.
Stir to prevent sticking.
Remove from heat.
To prepare the tofu, rinse cake of soft or regular tofu, pat dry, removing all surface moisture.
Whirl in a blender or food processor with steel blade until creamy.
Add vanilla, egg, cinnamon, and extract.
Continue blending while adding the honey-carob mixture.
Pour into an unbaked 9-inch pie crust of your choice.
Bake at 425° 15-20 minutes, or until crust is lightly browned and filling has a dull appearance.
Let cool completely on a rack before cutting.
