Vegetarian Shepherd's Pie

If you need some serious comfort food, try this Shepherd's Pie. It will fill you up on a chilly winter evening.
Ingredients
For the Mashed potatoes*|n2 medium potatoes (russet, red, yellow, Yukon Gold)|n1-2 T non-hydrogenated spread|n1/2 - 1 cup of non-dairy milk or vegetable stock|n1 tsp salt, or to taste|n1/4 cup nutritional yeast|n
For the Mushroom gravy*|n10 oz sliced mushrooms|n1 cup diced onion|n2 T water|n1/4 cup whole wheat flour|n1 cup water or vegetable stock|n3 1/2 tsp Italian spice blend (basil, oregano, marjoram, parsley)|n2 T tamari soy sauce|n1/4 - 1/2 cup of water or vegetable stock for thinning the gravy, optional|n1 cup chopped seitan|n
For the Filling|n1-2 T safflower oil or 1/4 cup vegetable stock or water|n1/2 cup diced onion|n1/2 cup diced carrot|n1.2 cup diced celery|n1 cup sliced zucchini|n1 cup green beans|n1 cup corn|n1 cup peas|n2 T soy or rice Parmesan cheese
