Harvest Pie

Ingredients
  Unsweetened applesauce 7 3⁄4 Cup (124 tbs)
  Chopped dates 1 Cup (16 tbs)
  Seedless raisins 1⁄2 Cup (8 tbs)
  Chopped dried peaches 1⁄2 Cup (8 tbs)
  Chopped dried apricots 1⁄2 Cup (8 tbs)
  Honey 3 Teaspoon
  Grated lemon rind 2 Teaspoon
  Chopped walnuts/Mixture of chopped nuts and chopped sunflower seeds 1 Cup (16 tbs)
  Safflower oil 1⁄2 Teaspoon
Directions

Combine applesauce, fruit, honey, and lemon rind in a saucepan.
Simmer, uncovered, over low heat, stirring frequently, about 15 minutes.
It should be very thick.
Cool.
Pour into an unbaked 9-inch pie crust of your choice.
Sprinkle nuts over fruit.
Bake at 375° 30 minutes, or until crust is baked and top is lightly browned.
