|Milk||1 1⁄2 Cup (24 tbs)|
|Sugar||6 Tablespoon (1/4 Cup Plus 2 Tablespoons)|
|Ground nutmeg||1⁄2 Teaspoon|
|Vanilla extract||1⁄2 Teaspoon|
|9 inch unbaked pastry shell||1|
Heat milk to scalding; set aside.
Beat eggs slightly; add sugar, nutmeg, salt, and vanilla.
Slowly add milk, stirring constantly.
Fill pastry shell three-fourths full.
Place pie on rack of oven and pour in remainder of custard.
Bake at 425° for 10 minutes; lower heat to 325° and bake 20 to 25 minutes or until knife inserted in center comes out clean.
