Key Lime Flavored With Angostura Bitters
|Eggs||4 , separated|
|Sugar||1 Cup (16 tbs)|
|Angostura bitters||2 Tablespoon|
|Whipped cream||2 Tablespoon|
|Lime juice||1⁄2 Cup (8 tbs)|
|Lime rind||1 , finely grated|
Beat egg yolks.
Add 1/2 of the sugar, and the lime juice and salt.
Cook in double boiler until custard coats spoon.
Remove from fire and add gelatin which has been soaked in 1/2 cup cold water.
Add bitters and rind.
Mix well until mixture begins to thicke
