Fresh Pear Crumble Pie

Ingredients
  Pastry 1 (For Single-Crust Pie)
  Sliced peeled pears 5 Cup (80 tbs) (Use Fresh Ones)
  Grated lemon peel 1 Teaspoon (Set Aside)
  Lemon juice 3 Tablespoon
  Sugar 1 Cup (16 tbs)
  All purpose flour 2 Tablespoon
  All purpose flour 1⁄2 Cup (8 tbs)
  Ground ginger 1⁄2 Teaspoon
  Ground cinnamon 1⁄2 Teaspoon
  Ground mace 1⁄8 Teaspoon
  Butter/Margarine 1⁄4 Cup (4 tbs)
Directions

Prepare and roll out pastry into a 12-inch circle.
Line a 9-inch pie plate.
Trim to 1/2 inch beyond edge.
Flute edge; do not prick pastry.
Sprinkle pears with lemon juice.
In a bowl combine 1/2 cup of the sugar, the 2 tablespoons flour, and lemon peel; stir in pears.
Spoon pear-sugar mixture into pastry-lined plate.
In another bowl combine the remaining 1/2 cup sugar, 1/2 cup flour, ginger, cinnamon, and mace.
Cut in butter till mixture resembles coarse crumbs.
Sprinkle crumb mixture over pear filling.
To prevent overbrowning, cover edge of pie with foil.
Bake in 375° oven for 25 minutes.
Remove foil; bake for 25 to 30 minutes more or till pie is bubbly.
Cool.
If desired, garnish with cheese triangles.
