Baked Plantain Pie
|Milk||1 Cup (16 tbs)|
|Butter||1⁄3 Cup (5.33 tbs)|
|Green pepper||1⁄4 Cup (4 tbs), minced|
|Eggs||2 , hardboiled|
|Salt||1 1⁄2 Teaspoon|
|Minced onion||3⁄4 Cup (12 tbs)|
Boil and mash the plantains.
Fry the chopped meat lightly.
Add the onions, pepper, sliced hard-boiled eggs, olives, raisins; cook 5 minutes more.
Grease a Pyrex mould, put in half the mashed plantains.
Then put in the meat mixture and cover with the other half of the plantains; brown in the oven for 20 minutes.
A good luncheon dish.
