|Shortcrust pastry||6 Ounce|
|Fresh spinach||1 Pound, finely chopped|
|Sour cream||1 Cup (16 tbs)|
|Cheddar cheese||1⁄4 Cup (4 tbs), grated|
|Fresh breadcrumbs||1 Cup (16 tbs)|
Pre-heat the oven to 425°F and grease a 12 inch flan dish.
Roll out the pastry to fit the dish, press it in and bake blind for 7 minutes.
Remove from the oven and reduce the oven temperature to 350°F.
Press the spinach into the pastry shell.
Beat the eggs and sour cream together and pour them over the spinach.
Melt the butter and mix it with the cheese and breadcrumbs.
Spread this mixture over the sour cream.
Bake the pie for 30 minutes, until the top is golden.
