Spiced Honey Apple Pie
|Pastry||1 , unbaked (For 2 Crust 9 Inch Pie)|
|Cooking apples||6 Large|
|Quick cooking tapioca||2 Tablespoon|
|Honey||1⁄2 Cup (8 tbs)|
|Ground cinnamon||1⁄2 Teaspoon|
|Ground nutmeg||1⁄2 Teaspoon|
Line a 9-inch pie pan with pastry.
Peel and core apples and cut into thin slices.
Mix apples with tapioca, honey, and spices.
Spoon mixture into pastry-lined pie pan.
Dot top with butter.
Cover with a second round of pastry; moisten edges with water and seal.
Cut a few slits in top.
Bake in preheated moderate oven (375°F.) 40 to 45 minutes, or until apples are easily pierced.
Cool before cutting into wedges.
