Divine Lime Pie
|Meringue pie shell||1|
|Sugar||1⁄2 Cup (8 tbs)|
|Fresh lime juice||1⁄3 Cup (5.33 tbs) (3 Limes)|
|Green food color||3 Drop|
|Chilled whipping cream||1 Cup (16 tbs)|
|Grated lime peel||1 Tablespoon|
Bake meringue shell.
Beat egg yolks in small mixer bowl until light and lemon colored.
Mix sugar, salt, lime juice and egg yolks in saucepan.
Cook over medium heat, stirring constantly, until mixture thickens, about 5 minutes.
Cool; stir in food color.
In chilled bowl, beat whipping cream until stiff.
Fold in lime mixture and grated lime peel.
Pile into meringue shell.
Refrigerate at least 4 hours.
If desired, garnish with sweetened whipped cream.
