Fresh Strawberry Pie

Ingredients
  8 inch baked pie shell 1
  Strawberries 1 1⁄2 Quart
  Cold water 1⁄2 Cup (8 tbs)
  Xylitol 4 Teaspoon
  Cornstarch 3 Teaspoon
Directions

Clean and thoroughly drain strawberries.
Combine 2 cup (500 mL) of the strawberries and the water in nonstick saucepan.
Mash slightly with the back of a spoon or potato masher.
Add xylitol and cornstarch.
Stir to blend.
Cook and stir over medium heat until mixture is clear and thickened.
Remove from heat and cool to lukewarm.
Place remaining 1 qtr (1 L) of strawberries in bottom of baked pie shell.
Pour strawberry glaze over the top.
Chill until firm. (A few drops of red food coloring can be added to the glaze, if desired.)
