Golden Peach Pie

Ingredients
  Pastry 1 (For 9 Inch Two Crust Pie)
  Cooked unsweetened dried peaches 2 1⁄2 Cup (40 tbs)
  Peach liquid 1⁄2 Cup (8 tbs)
  Cornstarch 1 Tablespoon
  Granulated sugar 1⁄2 Cup (8 tbs)
  Salt 1 Dash
  Cinnamon 1⁄4 Teaspoon
  Nutmeg 1⁄4 Teaspoon
  Lemon juice 2 Tablespoon
  Butter/Margarine 1 Tablespoon
Directions

Make as Lattice Pie.
For filling, arrange drained peaches in pastry-lined 9" pie plate.
Heat peach liquid; add cornstarch combined with sugar, salt, cinnamon, nutmeg; boil, stirring, until clear and thickened.
Remove from heat; add lemon juice and butter.
Pour mixture over peaches.
Bake at 425°F. 40 min.
Prune-and-Apricot Pie: Stewed dried prunes and apricots, half and half, may replace peaches.
