Gourmet Apple Pie
|Unbaked 9 inch pie shell||1|
|Dry bread crumbs||1 Tablespoon|
|Chopped toasted almonds||1 Tablespoon|
|Sliced peeled apples||5 Cup (80 tbs)|
|Egg||1 , beaten|
|Egg yolk||1 , beaten|
|Heavy cream||1 Cup (16 tbs)|
|Sugar||1⁄2 Cup (8 tbs)|
|Ground cinnamon||1⁄4 Teaspoon|
|Ground nutmeg||1⁄8 Teaspoon|
|Melted butter||1 1⁄2 Tablespoon|
Sprinkle bread crumbs and almonds in pie shell.
Arrange apples in pie shell.
Bake in 350° oven 5 minutes.
Combine 1 egg, 1 egg yolk, heavy cream, 1/2 c. sugar, cinnamon and nutmeg; blend well.
Pour 1/2 of cream mixture over apples.
Continue baking for 30 minutes or until custard is firm.
Pour remaining cream mixture evenly over all.
Bake 30 more minutes or until a knife inserted near the edge comes out clean.
Remove from oven.
Pour butter over the top.
Sprinkle with 3 tblsp.sugar.
Return to oven long enough to glaze topping, about 8 minutes.
Cool before cutting
