|Ripe papayas||4 Large, peeled|
|Granulated sugar||175 Milliliter (3/4 Cup)|
|Butter||30 Milliliter (2 Tablespoon)|
|Cornstarch||30 Milliliter (2 Tablespoon)|
|Dough||1 Cup (16 tbs) (Enough To Cover Bottom And Top Crusts)|
Preheat oven to 425°F (220°C).
Cut papayas in half, seed and slice 1/2 inch (1.2 cm) thick.
Place in bowl with sugar, nutmeg, cinnamon, butter and cornstarch; mix well.
Line 10 inch (25 cm) pie plate with half of rolled dough.
Add papaya filling and brush edges of dough with a bit of water.
Cover with top crust and pinch edges shut.
Score top several times and brush with beaten egg.
Bake 7 minutes.
Reduce heat to 350°F (180°C) and continue baking 35- 40 minutes.
