Foolproof Pie Crust
|Whole wheat pastry flour||1 1⁄4 Cup (20 tbs)|
|Butter||1⁄3 Cup (5.33 tbs)|
|Lemon juice||1 Tablespoon|
Combine flour, salt, and soda.
Cut in butter until pieces are about the size of peas.
Beat egg with lemon juice and water.
Add slowly to flour mixture.
Handle gently and do not overmix.
Roll out dough, fit into greased 9-inch pie pan, and flute edges.
When ready to use, bake at 425° F.for 15 minutes.
