Chocolate Cheese Pie
|Graham cracker crumbs||1⁄4 Cup (4 tbs)|
|Low fat cottage cheese||1 Cup (16 tbs)|
|Brown sugar||1⁄2 Cup (8 tbs), lightly packed|
|Cocoa powder/Cocoa powder||1⁄3 Cup (5.33 tbs)|
|Evaporated skim milk||1⁄4 Cup (4 tbs)|
|Eggs||2 , separated|
|Vanilla extract||1 Teaspoon|
|Low calorie whipped topping||2 Cup (32 tbs)|
1. Combine graham cracker crumbs and sugar. Spread over bottom of 9-inch pie plate. Set aside.
2 Using electric mixer at medium speed, beat together cheese, brown sugar, carob or cocoa powder, evaporated milk, egg yolks and vanilla extract in medium bowl until very smooth.
3. Using electric mixer at high speed, beat egg whites in small bowl until stiff. Using rubber spatula, fold egg whites into cheese mixture, then fold in whipped topping. Spoon filling into pie plate. Chill for 12 hours or overnight.
