Strawberry Triumph Pie

  Baked 9 inch pie shell 1
  Strawberries 1 Quart
  Granulated sugar 1 Cup (16 tbs)
  Cornstarch 3 Tablespoon
  Lemon juice 2 Tablespoon
  Heavy cream 1⁄2 Cup (8 tbs), whipped

Wash berries; hull.
Crush half of berries; stir in sugar, cornstarch, lemon juice.
Cook, stirring, over low heat till thickened, transparent.
Cut rest of berries in half.
Fold into cooked ones; refrigerate in shell till set.
Top with cream.

This is a pie my mom used to make when I was a kid. I still have her recipe and found it here on this site also. I just made it a minute ago so it's still setting in the fridge. From what I can tell so far (by slicking the left overs in the pot) I'll be eating the whole pie on my own!! It's so yummy. I used thawed frozen strawberries for this recipe and after the first tablespoon of corn start clumping in the strawberries, I put the remaining corn starch in a separate bowl with a touch of cold water, mixed and then added to my pot on the stove. All in all....a super recipe! P.s. 1 quart of Strawberries is equal to 4 cups strawberries. I guessed actually and never really measured my berries.
