Savory Spinach Pie
|Onion||1⁄4 Cup (4 tbs), chopped|
|Frozen chopped spinach||10 Ounce, thawed and drained (1 Package)|
|Ground nutmeg||1⁄4 Teaspoon|
|Cottage cheese||8 Ounce (1 Cup)|
|Light cream||1⁄2 Cup (8 tbs)|
|Parmesan cheese||1⁄4 Cup (4 tbs), grated|
|Eggs||3 , beaten|
|Unbaked pastry shell||1|
In a skillet, saute the onion in butter.
Remove from the heat; stir in the spinach, salt and nutmeg.
In a bowl, combine the cottage cheese, cream, Parmesan cheese and eggs; mix well.
Stir in the spinach mixture.
Pour into pie shell.
Bake at 350° for 45-50 minutes or until a knife inserted near the center comes out clean.
Let stand 5 minutes before cutting.
