New Orleans Pecan Pie Filling

Ingredients
  Egg yolks 2
  Sour cream 1 Cup (16 tbs)
  Sugar 1 Cup (16 tbs)
  Lemon extract 1⁄4 Teaspoon
  Sifted flour 4 Tablespoon
  Salt 1⁄8 Teaspoon
  9 inch baked pie shell 1
Directions

Mix egg yolks, sugar, flour, sour cream, lemon extract and salt.
Cook in double boiler for about 45 minutes until thickened.
Spoon into pie shell, and cover with topping.
