Honey Yogurt Pie

Ingredients
  Unflavored gelatin 1 Teaspoon
  Water 1⁄3 Cup (5.33 tbs)
  Honey 1⁄3 Cup (5.33 tbs)
  Pure vanilla extract 1 Teaspoon
  Grated lemon rind 1 Teaspoon
  Yogurt cheese 3 Cup (48 tbs)
  Mashed bananas/Pureed peaches/nectarines/blueberries/strawberries/raspberries 1 Cup (16 tbs)
  Baked 9 inch whole wheat pastry/1 pie shell/1 9-inch graham-nut pie shell 1
Directions

1. Soften the gelatin in the water for 5 minutes. Heat the gelatin over low heat, stirring to dissolve. Cool.
2. Combine the honey, vanilla, and lemon rind in a bowl. Add the gelatin mixture slowly and then stir in the yogurt cheese until smooth. Stir in the fruit and pour into the pie shell. Chill overnight. Garnish with fresh fruits.
