Honey Yogurt Pie
|Unflavored gelatin||1 Teaspoon|
|Water||1⁄3 Cup (5.33 tbs)|
|Honey||1⁄3 Cup (5.33 tbs)|
|Pure vanilla extract||1 Teaspoon|
|Grated lemon rind||1 Teaspoon|
|Yogurt cheese||3 Cup (48 tbs)|
|Mashed bananas/Pureed peaches/nectarines/blueberries/strawberries/raspberries||1 Cup (16 tbs)|
|Baked 9 inch whole wheat pastry/1 pie shell/1 9-inch graham-nut pie shell||1|
1. Soften the gelatin in the water for 5 minutes. Heat the gelatin over low heat, stirring to dissolve. Cool.
2. Combine the honey, vanilla, and lemon rind in a bowl. Add the gelatin mixture slowly and then stir in the yogurt cheese until smooth. Stir in the fruit and pour into the pie shell. Chill overnight. Garnish with fresh fruits.
