Farm Apple Pie

Ingredients
  Apples 5 Pound
  Lemon juice 4 Teaspoon
  White sugar 3⁄4 Cup (12 tbs)
  Brown sugar 3⁄4 Cup (12 tbs)
  Cinnamon 1 Teaspoon
  Salt 1⁄4 Teaspoon
  Nutmeg 1⁄2 Teaspoon
  Sugar 4 Teaspoon
  Flour 5 Cup (80 tbs)
  Salt 1⁄2 Teaspoon
  Baking powder 1⁄2 Teaspoon
  Shortening 1 1⁄2 Cup (24 tbs)
  Egg yolks 2
  Cold water 1 Scant Cup (enough to make)
Directions

Mix pastry and roll 1/2 of pastry to fit 15x10 jelly roll pan.
Sprinkle lemon juice on sliced apples.
Place 1/2 of apples on bottom of pan evenly.
Combine sugar and spice.
Sprinkle 1/2 of sugar over apples.
Spread rest of apples on top.
Spread remaining sugar on top, top with remaining pastry.
Trim off any extra edges.
Seal thoroughly by pressing together on edge of pan.
Cut vents into top.
Brush with milk, sprinkle with sugar.
Bake at 400° for 50 minutes.
Cool.
Drizzle with 1 cup powdered sugar mixed with 2 tablespoons milk.
