Key Lime Pie
|Lime juice||1 Cup (16 tbs)|
|Condensed milk||2 1⁄4 Cup (36 tbs) (sweetened)|
|Lime rind||2 Tablespoon, grated|
|Sugar||1⁄3 Cup (5.33 tbs)|
|Lime juice||1 Teaspoon|
Beat egg yolks until light and lemon colored.
Using a wire whisk beat in the condensed milk.
Blend in the lime juice and rind.
Spoon into cooled pie shell.
To make meringue, beat egg whites until frothy.
Beat in the lime juice.
Continue beating while gradually adding the sugar just until stiff peaks form.
Spread meringue on top of pie touching crust all around.
Bake at 350° for 12 to 15 minutes (until golden brown).
Cool and chill for 4 hours to set.
