Tutti Frutti Pie
|Plain gelatin||1 Tablespoon (1 Envelope)|
|Cold water||2 Teaspoon|
|Nonfat cottage cheese||3⁄4 Cup (12 tbs)|
|Boiling water||1⁄3 Cup (5.33 tbs)|
|Skim milk||1⁄4 Cup (4 tbs)|
|Vanilla extract||2 Teaspoon|
|Almond extract||1⁄2 Teaspoon|
|Concentrated aspartame||1 Teaspoon|
|Light mixed fruit chunks||1 Pound, drained|
Sprinkle the gelatin over the cold water.
Set aside to soften for a few minutes.
Meanwhile, put the cottage cheese into a food processor or blender and process for a full 2 minutes to make it very creamy.
Add the boiling water to the softened gelatin.
Stir until the gelatin is completely dissolved.
Add this mixture, milk, extracts, and aspartame to the blender.
Blend until the mixture is smooth.
Put the canned fruit into the food processor or blender and blend for a few seconds.
Pour into a pie crust or into a plain pie pan.
Chill until set.
