Mix the strawberries in a bowl with the sugar, aspartame, and lemon juice.
Set aside for approximately an hour.
Combine the boiling water and gelatin and stir until completely dissolved.
Add the strawberry extract and stir to combine.
Add the frozen yogurt and stir until it melts and the mixture is smooth.
Freeze for 10 minutes, until the gelatin starts to set.
Add the strawberries.
Pour into a pie shell of your choice.
